Parish of Saint Anne in Molo

Location: San Pedro Street, Molo, Iloilo City, Iloilo, Philippines

Saint Anne Parish Church is one of Iloilo City’s most recognizable sights due to its neo-Gothic design, particularly the pyramidal red spires on the top of its bell towers.

Because cement was not available when the building was built, masons used a mixture of sand and egg whites to bind the white coral pebbles and limestones that make up the chapel. The creation of baked pastries using egg yolk by the Molo women is credited with starting the Ilonggo pastry treat tradition. With its renowned locally made but Spanish-inspired Galletas (thin biscuits), Baadas (sugar-glazed cookies), and Barquillos, Panaderia de Molo preserves tradition even now (rolled wafer biscuits).
